The way to one's heart is through food!

With Valentine's Day landing on a Tuesday this year it only makes sense to appreciate that it is also Taco Tuesday! They say the way to one's heart is through food so cook them something they'll really enjoy!

Valentine's Day Tacos


Serves: 2

Ingredients:

  • Cooked beets
  • 4 Radishes
  • Apricot preserves
  • Pickled ginger
  • Cucumber
  • Corn tortillas
  • Fresh cilantro (optional)
  • Plain greek yogurt
  • Taco sauce
  • Salt and pepper, to taste
  • 2 small chicken breasts, cooked (optional)
  • Feta cheese (optional)

Directions:

  1. VEGGIES: Prep your veggies by chopping the beets, slicing radishes and chopping the cilantro.
  2. CHEESE: If your feta is a block chop it in to pieces or if it's crumbled set it aside with a spoon for serving. 
  3. CHICKEN: Warm your chicken up and dice it into pieces. 
  4. BEETS: Place your chopped beets in a mixing bowl, season with s&p and toss until they're evenly coated in oil/seasoning. Place in the oven until the beets turn brown-ish/black.
  5. RELISH: Peel large strips of skin off the cucumber leaving a little. Slice it into smaller pieces and put it in a food processor. Add the ginger to the food processor and combine. If it is too thick pour in some pickled ginger juice. Stop when it looks like relish.
  6. YOGURT: Mix together the greek yogurt and hot sauce (I prefer Frank's Red Hot Sauce) in a bowl.
  7. TORTILLA: Warm tortillas up when the toppings are ready. This can be done on the stove, in the microwave or you can even enjoy them room temperature. 
  8. Add toppings to tortilla in the ratios of your preference!
