Cowboy Caviar
Base Ingredients
- 3 cups of seeded and diced tomatoes
- 1 x 15 oz can of corn, rinsed and drained
- 1 cup of bell pepper (any color), seeded and diced
- 3/4 cup of red onion, small and diced
- 1 x 15 oz can black beans, rinsed and drained
- 1 x 15 oz can of black-eyed peas, rinsed and drained
- 1 to 2 avocados, sliced
- 1 jalapeño, seeded and minced (optional)
- 1 x 15 oz can chick peas, rinsed and drained (optional)
- cilantro, for garnish (optional)
Dressing Ingredients
- 1/3 cup olive oil
- 2 tbsp red wine vinegar
- 2 tbsp fresh lime juice (approx. 1 lime)
- 1 tsp honey
- 1 tsp cumin
- 1 clove garlic, minced
- salt and pepper, to taste
Directions
- In a bowl, add the tomatoes, corn, pepper, onion, beans, peas, and jalapeño. Stir to combine.
- In a separate bowl, prepare the dressing by combining the olive oil, vinegar, lime juice, honey, cumin, garlic, salt and pepper. Whisk the ingredients until well combined.
- Pour the dressing into the bowl with the base ingredients. Taste and adjust seasoning if need be.
- Cover and chill for at least 1 hour or overnight to allow the flavors to blend.
- Add the avocado right before you serve it. Chop the cilantro and add it to the mix (optional).
- Serve with tortilla chips. I like the lime flavored tortilla chips!
