Is the Superbowl about the food or the football? Personally I don't watch football or know a whole lot about what is going on. I do tune in to the Hamilton Tiger Cat games once in a while but for me the Superbowl is always about the food and the good times with friends and family. Here is a great healthy and simple recipe that you can make ahead for your Superbowl party this Sunday. Yes, a Superbowl party can have healthy treats that aren't just cut up fruit!

Cowboy Caviar


Base Ingredients

  • 3 cups of seeded and diced tomatoes
  • 1 x 15 oz can of corn, rinsed and drained
  • 1 cup of bell pepper (any color), seeded and diced
  • 3/4 cup of red onion, small and diced
  • 1 x 15 oz can black beans, rinsed and drained
  • 1 x 15 oz can of black-eyed peas, rinsed and drained
  • 1 to 2 avocados, sliced
  • 1 jalapeño, seeded and minced (optional)
  • 1  x 15 oz can chick peas, rinsed and drained (optional)
  • cilantro, for garnish (optional)

Dressing Ingredients

  • 1/3 cup olive oil
  • 2 tbsp red wine vinegar
  • 2 tbsp fresh lime juice (approx. 1 lime)
  • 1 tsp honey
  • 1 tsp cumin
  • 1 clove garlic, minced
  • salt and pepper, to taste

Directions

  1. In a bowl, add the tomatoes, corn, pepper, onion, beans, peas, and jalapeño. Stir to combine.
  2. In a separate bowl, prepare the dressing by combining the olive oil, vinegar, lime juice, honey, cumin, garlic, salt and pepper. Whisk the ingredients until well combined.
  3. Pour the dressing into the bowl with the base ingredients. Taste and adjust seasoning if need be.
  4. Cover and chill for at least 1 hour or overnight to allow the flavors to blend. 
  5. Add the avocado right before you serve it. Chop the cilantro and add it to the mix (optional). 
  6. Serve with tortilla chips. I like the lime flavored tortilla chips!
